Product Description

This comes from a farm that borders Corcovado National Park. The harvest, fermentation and drying notes for each batch number are included (average of 84 hour fermentation). The beans are small in size with small pods and Less twang than the variety (Matina) that's typical in other areas of Costa Rica. Dark ripe fuits, Flowers + Earthen with Carmel and Nutty notes. We make it our passion to perfectly ferment each batch according to what is happening with it and what we want out of it. There is no specific # of hours or recipe to make this happen, just like fermenting grapes for wine or grains for whisky there are many factors that can change from harvest to harvest (like the weather or the area of the plantation being harvested).

FLAVOR AND PRODUCT EXPERIENCE:

Beautiful, flavoursome beans sourced from growers who care deeply about the fermentation and drying of their beans. Sent well packaged and with storage advice. On-going communication with the seller. Really wonderful people to deal with and some of the best beans in Costa Rica. My beans might need to rest a while before developing a nutty flavor right now they are mostly fruity / berry like to me in flavor with a deep lingering after-taste. My customers love the chocolates I make with these.

FLAVOR AND PRODUCT EXPERIENCE:

Our visit to Cocoa Ethika was amazing. Ben, Blanca and Damien were gracious hosts. We were given a brief introduction to the cocoa production process, such as how the beans are gathered from local farmers, fermented and dried. Afterwards we were treated to a wonderful selection of chocolate bars which were hand crafted by them. I must say it was the best dark chocolate (90%) I have ever tasted! There was no bitter taste, very fruity and smooth, delicious! After our tasting we drove a few miles to a local cocoa farm run by Don Castro. Overall it was a great experience and highly recommend the adventure!
